Easy Sauteed Squash and Zucchini
This Sauteed Squash and Zucchini recipe is quick, easy, and a huge hit with my picky kids.
Serves 3-4
Ingredients:
3 medium size squash, diced
1 large zucchini, diced
1 small onion, diced
1 tablespoon of oil or butter
Pinch of salt and pepper(optional)
Parmesan cheese
In a large skillet heat 1 tablespoon of oil or butter over medium heat. Add the diced onion and zucchini. Cook for 3 minutes and add the diced squash. Add pinch of salt and pepper(optional). Cook for an additional 12 minutes. Sprinkle with Parmesan cheese and you are ready to serve!
You can cook the veggies a few minutes less or more depending on how soft you want them. This makes a perfect addition to any dinner. We serve it with a biscuit/bread and apple sauce/yogurt and it is a huge hit! I love how quick and easy this recipe is. It can be hard to find time to make a healthy side dish but this easy sauteed squash and zucchini recipe is perfect!
